Besides characters mentioning the 2008 heist of Paul Cézanne’s “Boy in a Red Waistcoat”, we don’t see much art history.

It mostly acts as a piece of a puzzle for Heat and the police to solve as they try to search for a fugitive.  It also acts as another reference to a painting that depicts youth.
